Hey and welcome back! I hope 2022 has started off well for you, especially as you get back into the swing of life after the holidays. This week I’m bringing you a super easy casserole that is easy on the wallet and the waistline! So pour a drink and grab a pen because this Reuben casserole is sure to please!
Like for so many others, the holidays were tough on my healthier eating plan and now it’s time to buckle back down. I came across this recipe and after I made it I knew it was one I had to share with you. I made a couple changes to the original recipe and man this is good!
For this recipe you will need:
one large head of cauliflower
2-3 cans corned beef (depending on family size)
3 cups sauerkraut
1 cup thousand island dressing
9-10 slices Swiss cheese
Olive oil
Salt and pepper
Start by preheating your oven to 400 degrees and while it preheats, chop up the cauliflower and toss it with a light drizzle of olive oil and a dash of salt and pepper. Roast the cauliflower for about 30 minutes.
When the cauliflower is done spread it along the bottom of a 9×13 pan- I used an aluminum pan so I would have less clean up. Top the cauliflower with the drained sauerkraut- you and add more if you like. Next drizzle the thousand island dressing on top of the sauerkraut. I didn’t use the entire cup but you do what you think your family will like.
I was thinking the canned corned beef would come out of the can like spam does, and my plan was to slice it- I was wrong. So I crumbled the corned beef on top of the dressing and then topped with the slices of Swiss cheese. That’s it! Just put back in your 400 degree oven for 20 – 25 minutes and dinner is served!
Now I know there are many people who don’t care for cauliflower or who may not be watching their carb intake like I am, so you could change this up by adding some carbs. Instead of cauliflower you could use diced or sliced potatoes that had already been boiled or sautéed. You could also put this casserole over egg noodles, rice or quinoa.
No matter how you make it, make it fun for you and your family. This casserole would be great with a nice side salad or some toasted bread but it’s best with family or friends! I hope you enjoy and as always I’m sending love from my kitchen to yours.
