My friend, Joy, gave me this recipe about 20 years ago, and I made it frequently. But then I lost it (the recipe, I mean). And here it is again. For many years, I can’t remember eating fried rice in a Chinese restaurant that was anything like this, but I am old enough to remember how it was served back in the day.
So the next time you bring home Chinese food, you can hold the rice and make your own!
AUTHENTIC FRIED RICE
Serves: 4-6 as a side dish
INGREDIENTS:
1 Egg, scrambled
3/4 Cup Frozen Peas, thawed or you can use canned peas
4 Cups Cooked Rice (not instant)
1-2 Tsp. Dark Soy Sauce
2 Scallions, sliced
DIRECTIONS:
Heat a 10-12” skillet (or wok if you have one). Add the egg and scramble, add the peas and stir into the egg. Add the rice. Add the soy sauce around the rim of the skillet. When it sizzles, incorporate it into the rice mixture. Lastly, add the scallions. Stir together and serve.
