Hey and welcome back to my little corner of the paper that is bursting with flavor! This week I have a great low carb casserole that will be a hit with your family and requires minimal prep and clean up. So pour that drink and grab a pen to jot this down!
This week I am bringing you a loaded cauliflower casserole that is great for these chilly evenings. One of the things I love about this casserole is it tastes like it should be bad for you but it isn’t!
For this recipe you will need:
a very large casserole dish (I use an aluminum roasting pan for even less cleanup)
2-4 bags of fresh chopped cauliflower (depending on family size)
16 oz package sliced mushrooms
1 large yellow onion chopped
2 packages kielbasa chopped (beef or turkey)
1/2-2 cups shredded cheddar cheese
1 -1/2 cup sour cream
1 cup mayonnaise
1/2-2 packages dry ranch seasoning
Pepper to taste
Preheat your oven to 375 degrees. Mix all ingredients in a large bowl or in the roasting pan. Spread everything out evenly and bake for about 45 minutes. Just like that dinner is served!
You could change out the protein with whatever your heart desires. The original recipe that I’ve used for years calls for bacon and no kielbasa which makes for a great side dish for any BBQ or potluck. You could always change this up by sprinkling with green onions after you pull it out of the oven and drizzle with a little BBQ sauce.
