Yup, I know, another soup. But isn’t that what you want to eat when it’s chilly or cold? Do you eat ice cream in the winter? Well…. Hmmm. You know I love any good food that will feed a lot of people and is so good for that comfy, warm feeling when it’s cold outside and the heat goes on. With this one, you just chop everything and throw it in the crockpot. Hours later, it is done! You will notice that the pictures show a lot of pasta because I used a lot of pasta because I like it – just remember this is a “no judgement” column!
CROCK POT VEGETARIAN SOUP
Servings: about 10-12
INGREDIENTS:
4 Cups Broth (vegetarian or chicken, homemade or bought)
4 Cups Diced Tomatoes – no juice
1 Tbsp. Fresh Basil, chopped (or 1 Tsp. Dried)
1/2 Tsp. Oregano
3 Carrots, chopped
1 Pkg. Fresh Mushrooms, chopped
1/2 Onion, chopped
2 Zucchini, chopped
3 Stalks of Celery, chopped
2 Yellow Squash, chopped
1 Cup Green Beans, chopped
3 Cloves Garlic, minced
Salt and pepper to taste
1-1/2 Cups Pasta (I used Ditalini, but any small one will do)
DIRECTIONS:
Cook all the ingredients in a crock pot for about 5 hours on high or 8 hours on low. Add the pasta for the last 20-30 minutes or until done.
