I think this can be added to that list of comfort foods we all have. It’s easy to make and does not use many ingredients — my kind of recipe.
The other reason I included this recipe is that I found out cabbage is low in calories, a good source of fiber, an immune booster and may possibly lower cholesterol. But honestly, it just tastes good!
CABBAGE & NOODLES (HALUSKI)
Serves: 2 Large Portions or 4 Sides
INGREDIENTS:
8 Oz. Pkg. Noodles (any type you like)
1 Small Onion, sliced
1 Medium Carrot, julienned
1/4 Medium Cabbage, sliced thin
1 Tsp Garlic Powder
1 Tsp Salt
1/4 Tsp Turmeric
Pepper to taste
1 Tsp. Caraway Seeds (optional)
DIRECTIONS:
Cook the noodles as directed on the bag and set aside. Don’t drain.
In a non-stick skillet sauté onions with a pinch of salt until softened. You can add a little water or vegetable broth if it starts to stick. After the onions have softened, add the carrots, cabbage, garlic powder, salt, pepper and turmeric. You can add a little more water or veggie broth to aid in cooking. Once the cabbage has wilted, take noodles out of the water using slotted spoon (don’t discard water) and add to the pan. Stir and incorporate everything, adding some of the pasta water to keep it moist. Taste to adjust seasoning and add more salt and pepper if needed.
