Hey there and welcome back! I’m glad you decided to join me this week as I want to share a little about a new personal journey I’m on and how that has changed my view on food. So pour that drink and pull up a chair for a recipe that is sure to knock your socks off.
Recently I was diagnosed with diabetes after being borderline for a year or so. My doctor asked me what I thought about changing to a vegan diet and my response was “next question” as that just isn’t an option I wanted to explore. After some serious discussion and educating myself on diabetes, I knew I was in for some serious lifestyle changes.
I immediately started a low-carb diet and started intermittent fasting because I know the first step to fighting this disease is to get off this excess weight. Next, my friends and family starting springing into action giving me diabetic and keto cookbooks because everyone knows how much I love to cook.
I knew I wasn’t going to let this diagnosis hold me down and I have really done well at adapting to this new way of eating and living. I focus more on the foods I can eat than the ones I can’t and I try to be creative, which brings me to this week’s recipe!
I am finding that when I get a craving for something I need to find a creative and healthy way to satisfy the craving and lately I have been wanting pizza. While cauliflower crust is something I like, my wife isn’t crazy about it so it was time for me to think outside the box. A simple Pinterest search later and I arrived at the recipe I have for you today — chicken crust pizza!
For this recipe you will need:
1 pound ground chicken
1 egg
1/4 cup Parmesan cheese
1/2 cup (plus extra) shredded mozzarella cheese
1 clove garlic freshly minced
Italian seasoning
Salt and pepper
Preheat your oven to 400 degrees and line a cookie sheet or pizza stone with parchment paper — don’t skip this step.
Next, mix the egg and ground chicken together really well. Then add the parmesan and 1/2 cup mozzarella, garlic, a few sprinkles of Italian seasoning and salt and pepper. Mix well and spread out on the parchment-lined cookie sheet.
The directions said to bake 18-20 minutes but it took mine 25 or so minutes to start getting a nice golden color. Then remove from the oven sprinkle a little mozzarella and add your favorite toppings — now remember the crust is chicken so you probably want to keep your toppings in line with chicken a little.
When I made this the other day I put all veggies on the pizza because that is super important for my diet. So I topped ours with orange bell pepper, red onion, black olives, spinach, mushrooms and diced cherry tomatoes! For a family of more than two, I recommend doubling this recipe.
