My friend, Joy, sent me this recipe. I love anything mushroom, but add that wine, and oh boy. If you have family that are not huge vegetable eaters, this could be an answer to serving something they will like and not even notice the veggies.
MARSALA SAUCE WITH MUSHROOMS
SERVES: 4-6
INGREDIENTS:
2 Pkgs. Sliced mushrooms
1 Onion, chopped
1/4 Cup Marsala wine
1 Bouillon cube
1/2 Cup water
2 Tsp. Corn starch
DIRECTIONS:
In a hot skillet, fry the mushrooms and onion. You can use olive oil, I did not, and it was fine. When they are soft and have reduced, add the marsala wine. Let it simmer for a few minutes. Then, add the water and bouillon cube (the cube will melt in the sauce). Stir well and let simmer again. Finally, add the corn starch to thicken a bit.
This can be plated with overcooked veggies. I sautéed small gold potatoes and zucchini. It would also be tasty over any macaroni or spaghetti.
