Pick those green beans and add a few ingredients, and you’re all set. This is a simple recipe, but oh so good. I guess you could leave out the almonds, but why? You will also notice that in many of my recipes, I prefer to use Olive Oil rather than butter. It’s just my Italian upbringing, and may I remind you, it is also healthier.
GREEN BEAN SIDE DISH
Yields: 4 Portions
INGREDIENTS:
1 Lb. Fresh Green Beans
3 Tbsp. Olive Oil
3 Cloves Garlic, minced
1/4 Cup Slivered Almonds
Salt, Pepper & Lemon Juice to taste
DIRECTIONS:
Remove stems from beans and cut in half. Place the beans in a large skillet and cover with water. Bring to a boil, cover and simmer until the beans begin to soften. Test every so often and when they are where you want them, drain the beans, discard the water and add the olive oil. Return the beans to the skillet and fry over medium heat until they are a little brown and as tender as you want them. Add the garlic and the almonds, reducing the heat to low. Stir to keep the garlic and almonds from getting too brown. Add very little salt, some black pepper and a squirt of lemon juice.
