For most folks barbecue sounds yummy, and I must admit there are times when I am tempted to try it. But, to stay true to my vegetarian diet, I do not. But for those of you who are not vegetarians, this would be an easy lunch (or dinner) when you are short of time.
PULLED BBQ CHICKEN SANDWICHES
Preheat Oven: 350° Baking Time: 1 hour Makes: 2 Sandwiches
INGREDIENTS:
2 Boneless chicken breasts (or thighs or one of each)
1 Tablespoon apple cider vinegar
1/4 Cup bottled barbecue sauce (your choice)
1/2 Sweet onion, sliced
3 Tablespoons butter
Salt, pepper and Mrs. Dash (original) to taste
Sprinkle of cayenne pepper, if you like it spicy
DIRECTIONS:
Dry the chicken with a paper towel and place in a baking dish. Sprinkle with salt, pepper and Mrs. Dash (and cayenne pepper if using). Pour the sauce and vinegar over the chicken, placed sliced onion on top and put dots of butter over all of it.
Cover the dish and bake at 350° for 1 hour or until the chicken falls apart. Shred it for sandwiches.
TIP: You can make this in your crockpot by putting all the ingredients into the pot and covering. Cook on medium for 4 hours.
