My sister, Norma, gave me this recipe. She cooked for a convent of nuns, and if you don’t think she had a tough audience … well. However, at that point in time I had little interest in cooking, so she introduced me to the easiest recipes she knew, and I made this time and again.
EASIEST SWEET CHICKEN
Preheat oven to 350° Bake: 1 hour Serves 6/8
INGREDIENTS:
5 Large split boneless chicken breasts or 8 or 9 regular boneless chicken breasts
1 Bottle Russian dressing (the one that looks red – not creamy)
1 Jar apricot jam**
1 Pkg. onion soup mix (with or without mushrooms – or add some fresh mushrooms)
DIRECTIONS:
Mix the three ingredients together. Place chicken in a baking pan (I use 9” x 13”) and pour mixture on top. Bake for about one hour or until it is bubbly.
Serve over rice.***
*If you use half the chicken, use half the ingredients. This recipe lends itself to making more or less, with adjustments to the three ingredients.
**I could not find the jam, but found apricot preserves (found in Walmart), which will do nicely.
***I love brown rice, so that is what I use. I also cook my rice in a broth as opposed to water, which gives it a much richer and nuttier flavor.
