Hey and welcome back! I know by this point in the week most of you have had your fill of Thanksgiving and all it has to offer, so this week I want to talk about different things to do with the leftovers. So pour a drink and grab a pen to jot these ideas down.
I know we all eat on thanksgiving leftovers for a few days and then we start giving it away and then we get sick of it. So I wanted to offer some ideas of things to do with those leftovers to change things up.
For any leftover potato salad you may have , consider frying up some bacon and slicing some green olives to throw in there to completely change the flavor- this idea come from my dear friend Amy!
Any leftover green beans can be easily transformed into green bean casserole by adding crème of mushroom soup, Worcestershire sauce, a little water or cream and some of those little fried onions on top.
If you have any mashed potatoes and corn left consider joining the two for a carb loaded delight! Mix the two together with some salt, pepper and a couple tablespoons of flour to hold it together. Form into patties and fry in a little oil until golden brown drain on towel lines plates and serve with some of that left over gravy or maybe a little sour cream.
A great option for leftover turkey to to chop it up fine or into small chunks and put in a large mixing bowl with a large diced onion, a few stalks of diced celery, a few handfuls of nuts if your heart desires, some dried cranberries, a few good dollops of Mayo (amount depends on how much turkey you have) and salt and pepper to taste! Serve on whatever leftover bread you have from thanksgiving!!
My last idea is one that is sure to please. If you have leftover ham and stuffing consider a breakfast casserole. Dice some ham and add to the stuffing in a deep casserole dish. Top with some onion and cheddar cheese and then whiskey together 6-8 eggs with a little milk or cream and pour over everything and bake at 375 degrees for about 40-50 minutes or until eggs are set.
