There are variations of this recipe, but in case you have not seen any of them, this one was sent to me by my friend, Vicki. She bought the actual almond cake pan. However, this can be made in a Bundt pan, but the recipe would have to be doubled. You can also use a loaf pan with the recipe as shown below. This pan is available on the “big A” and not very expensive. There are different quantities to purchase as well.
Scandinavian Almond Cake
Preheat Oven: 350° Bake: 40-50 Minutes Servings: 18 (if using almond cake pan)
INGREDIENTS:
1 & 1/4 Cups sugar
1 Egg
1 & 1/2 Teaspoon almond extract
2/3 Cup milk
1 &1 /4 Cups flour
1/2 Teaspoon baking powder
1 Stick butter, melted
DIRECTIONS:
Combine: sugar, egg, almond extract and milk and beat well.
Add: flour and baking powder and mix.
Add: melted butter and mix all ingredients well.
Pour into greased pan.
Bake at 350° for 40-50 minutes until the edges are brown.
Let the cake cool for several hours,
and then remove from pan. Sprinkle with powdered sugar.
